1. Season pork with salt and pepper. Seal in a hot pan with butter.
2. Caramelize garlic and onions in pan. Add milk, sage and lemon zest/juice.
3. Put pork in milk mixture in a braising tub, covered, and bake at over 180°C for 3 hours.
4. Slice pork to desired size and garnish with braising milk and pork crackling.
