Chinese Pork Belly Curry

Ingredients

1.5kg pork belly 
50g red onion 
20g garlic 
10g ginger powder 
100g curry powder 
30g chilli powder 
20g turmeric powder
50g curry leaves 
20g lemongrass 
100g evaporated milk 
Fresh tomatoes 
50ml cooking oil 
1l water

Cooking Method

1. Firstly, add some water to curry powder, chilli powder, ginger powder, turmeric powder, 
mix them into a paste.
2. Heat oil in pot, sauté the lemongrass, curry leaves and add in the blended onions and 
garlics and sweat till fragrant. Then, add in the mixed powder and stir well. Pour in 500gm 
of water, add tomatoes.
3. Bring to boil and place pork belly in and cook till tender.
4. Pour in evaporated milk and correct the seasoning, bring to boil again.
5. Serve hot with steamed rice or baguette.
