1. Heat olive oil on medium high heat and fry sausages till brown on both sides. This will take a total of about 5 minutes. Set aside.
2. Using the same pan, sauté red onion, bell pepper and chickpeas. Then add the sausages. Combine and set aside.
3. Using a cast iron skillet over medium high heat, heat some olive oil before placing pita bread on the hot skillet. Cook until bread begins to puff up and has brown spots and blisters, about 2 minutes on each side.
For the salad:
1. Drizzle some extra virgin olive oil and lemon juice over the rocket salad and mix well.
To serve:
1. Spread spicy hummus dip on the pita bread. Then top with sausages, onions, peppers, chickpeas and salad.
