Salami Carpaccio

Ingredients

For 4 servings:

8 slices Hungarian Mangalica salami
8 slices Hungarian Winter salami
A handful of capers
1 handful of rockets


For the cheese mousse
50g mascarpone cheese
50g ricotta cheese


For the dressing
Red wine vinegar
Extra virgin olive oil
Sea salt and freshly cracked pepper

Cooking Method

For the carpaccio

  1. Wrap some rockets with a slice of salami.
  2. Chop the remaining rockets and combine with the dressing. 
  3. Drizzle the dressing over the carpaccio.
  4. Using a pastry bag, pipe some cheese mousse on the carpaccio and finish off with some capers.


For the cheese mousse

  1. Mix mascarpone and ricotta cheese together


For the dressing

  1. Combine everything together to make the dressing.
