Seasoning spice preparation
1. Toast spices and nuts in a pan until fragrant and set aside to cool.
2. Blitz all ingredients in a spice grinder.
3. Use what you need and store any leftovers for later use in a glass jar.
Making the wraps
1. Add the pork, onion, and sliced ginger in a bowl.
2. Add shaoxing wine, light soy sauce oyster sauce, salt, and szechuan peppercorns.
3. Mix well.
4. Add the cornstarch and plain flour.
5. Mix well until coated.
6. Deep fry the pork until golden brown.
7. Sprinkle with seasoning spice blend.
9. Assemble the wraps
10. Spread sauce on a Moo Shu pancake, then top with carrot, cucumber and the deep fried pork.
11. Roll up and close the wrap.
12. Enjoy!
