Raspberry Hoisin Fillet

Ingredients

For 6 servings:


1 Canadian pork fillet
250g fresh raspberries
125ml raspberry jam
60ml hoisin sauce
30ml red wine vinegar
2 green onions, trimmed and thinly sliced
2 garlic cloves, minced
2 tsp freshly grated ginger
½ tsp hot red pepper flakes
Extra virgin olive oil
Sea salt
Freshly cracked black pepper

Cooking Method

  1. Pre-heat oven to 220°C.
     
  2. In a small saucepan, heat up some oil over medium heat. Add garlic, ginger and red pepper flakes and sauté until fragrant, about 30 seconds.
     
  3. Stir in raspberry jam, hoisin sauce, red wine vinegar and a pinch of salt and pepper. Cook until warmed through, remove from heat and set aside.
     
  4. Heat more oil in a large frying pan over medium-high heat. Season pork fillet generously with salt and pepper and sear until brown all over, about 1 to 2 minutes per side. Transfer to a foil lined baking sheet and brush with the raspberry hoisin sauce prepared earlier.
     
  5. Roast for 15 minutes, then brush with more sauce and continue to roast for another 15 to 20 minutes. Let meat cool for 10 minutes on baking sheet.
     
  6. While the meat is resting, warm remaining raspberry hoisin sauce over medium heat. To serve, slice pork, drizzle with raspberry hoisin sauce and garnish with green onions and fresh raspberries.
